I have just sold my motorcycle which was advertised as "cash on delivery"
The buyer who is not local, has contacted me saying he cannot collect for
a while due to work commitments, but is happy to pay for the bike. I don"t know
what is the safest option as regards agreeing to this, and how long I should wait
before collection, should I insist on some form of collection date?
Having encountered "scammers" previously, I want to make
sure that everything is done correctly.

There is no buyer protection on vehicles, so would be unwise for buyer to pay without seeing.
I suggest you give a fixed date for viewing after which you would cancel sale. Using cancel for nonpayment gives buyer an unpaid strike, and avoids any selling fees, but listing fee is not refundable.
Waiting is a pain as you do not know whether it is a real sale or just time wasting, when you could relist.
Suggest you look at 30 day Classified Ads. where sale is not completed until you mark as sold.

Further to my post, If I was to accept payment prior to collection,
then technically, I would no longer own the bike. I would however,
be in possession of it until a collection date was decided upon, this
could be one week or more. Am I supposed to continue insuring it,
and would I still be responsible for it, should anything happen to it?.
I"m not happy about this, and have not as yet, received any indication
as to when collection will/would be made.
