You can opt out of Simple Delivery and choose your own postage during the listing or revising process. It's not working properly but see the workaround solution on here:

It’s outrageous that a sale (from whom eBay take a massive commission) is effectively locked in to their ludicrous selling terms. I have the options of being obliged to buy postage for an item which is too large for the stated postage, or buying that postage from eBay and risking that the item actually gets to the buyer. Neither of which are acceptable; I have been a member of eBay for over 25 years, and you would have thought that would count for something. I’d rather take things to the charity shop and avoid this hassle.

A quick update. I went on the support AI assistant thing, where i am told that “You don't need to cancel this label. We refund any unused Simple Delivery labels.” I’m hopeful that the postage I buy myself will equate to the original potage as paid by the buyer.

If you don't use the Simple Delivery label provided, you or your buyer will be refunded, depending on who paid for postage.

What is the 'enormous commission' which Ebay take?
There are no seller's fees and buyers pay a small premium of 4% + 75p.
