Assuming it was Simple Delivery you can either cancel/refund the transaction with the buyer's agreement (via the dropdown actions menu arrow for the item on your orders list), opt out of using Evri here:
https://www.ebay.co.uk/ship/prf

and the relist for the buyer to buy and pay again.

Or you could buy the RM postage from your own pocket.    If you paid for the first label you can cancel it here:
https://www.ebay.co.uk/claims/simple-delivery/refund/seller
If the buyer paid for it it will be refunded automatically in 30 days.   See if you can add the new tracking number via the dropdown menu (on your browser, not the app).   If not the payment will be released in 14 days.

Thanks for your response. Seller doesn’t want to relist as she’ll be charged re-listing fees.

Seems we’re caught in an impossible loop???

Does your seller have a private or business ebay account?

Private selling accounts do not usually have listing fees.

Who is it that wants to change the postage method?

The seller - I am the buyer and have an issue with the preferred carrier.
