how do i choose what postage i want ebay is just doing it for me automatically 

i don't even get to see how much im paying

Private sellers have to use Simple Delivery.

If you select 'buyer pays', the payment goes direct to Ebay and they provide a label.

If you choose freepost/seller pays, the price is shown on the listing as you create it.
