I've sold my item, buyer collected, have had money transferrd to account, but didn't scan the customers collection code, how do I wipe the listing without the collection code, seems stupid there's no options, this is why I hate ebay, no help at all.

You can't do anything without the code. You can ask the buyer to message it to you then enter it in the order details. Or just leave it.

But if its your current listing the buyer should have used it to buy. You will have to end it via the dropdown menu next to the item.

It's not ebay, or Ebay's processes that is the problem here.

Getting the collection code off a buyer is extremely important for the seller, it helps with ebay seller protection, payment, and closing off the sale in the seller's account.

What is stupid about it, unless you the seller deals with a collection item in the correct way, then the buyer could collect and then open a not received case.

The code is the only way for you to prove that item has been delivered.
