So I mixed up two items, now the buyer wants the original ordered item , eBay said as I used simple delivery they are dealing with it. The buyer messaged to say no one from eBay has contacted them, what do I do?

The buyers should open "not described" returns to send items back for refunds. Then you relist for them to buy again. SD are only involved for loss or damage in transit.

Why do eBay say they are dealing with it but have done nothing?

It may be that your buyer has started an 'item not received' claim - that is quite a common thing when buyers receive the wrong item.
As advised, message both buyers and ask them to open a return case stating the item did not match the description.
If either buyer has opened an 'item not received' case, they should close that case before opening a return.
Then, you will have to provide a postage label for each buyer and refund when you get the items back.

eBay has got it wrong, which isn't unusual. This is not a "delivery related question". It's a simple case of both buyers having been sent the wrong items. This is the seller's responsibility, not eBay's.
Forget eBay dealing with it, because they won't. As has been said, both buyers need to open "not as described" money back guarantee cases; in response, you send them prepaid return labels and refund on return.
You can relist the items at a buy-now price and let your buyers know. If they still want them they can buy them a second time.
