I have seen a glass item that id like to order. The cost is several hundred pounds and im concerned where i would stand financially if it arrived shattered. eBay policy suggests that I’d be responsible for returning it to the seller but I can’t believe it would be sensible to send a package of broken glass through the post. In practice, what would happen in these circumstances.

Buyers are never out of pocket if something arrives smashed as long as they use the money back guarantee.
Leave what happens to if it arrives that way. There are a number of variables that will dictate what you do with the item.

You just open a NOT AS DESCRIBED CASE damaged in transit. EBAY is responsible for refund, not the seller. That is what the money back guarantee is all about.
What checks if any they make I do not know, but to me it seems open to abuse.

Who is responsible will depend on whether simple delivery was used.

If the seller is a private seller and using ebay's Simple Delivery (you can tell by it not saying which courier they use on the listing) then if you opened a return using the reason "Item damaged" ebay would issue the full refund themselves and you don't have to send the item back.
