I want to offer Special Delivery and not Simple postage due to the value how do I do this. Thanks

You can only opt out of Simple Delivery for items worth more than £750.    With SD you are protected if the item is lost/damaged in transit up to £750.   That means ebay will pay the refund, not you, if a buyer opens a claim.  You keep the original payment.
