Just cancel the transaction and they will automatically be refunded.
You will have to pick a reason for the cancellation from the drop down list so use that there's a problem with the buyers address which should prevent you getting a default on your account..

How do you cancel I can’t find the place to cancel

Orders > look for the photo of the item you want to cancel
Click on vertical ... to the Left of this photo
Dropdown menu to Cancel Order
In this instance, the reason you choose is that the item is out of stock.
The Buyer will still be able to leave Feedback, so it is important to message them politely explaining your mistake.
Since you have a new selling account, I will warn you... this is bad practice and eBay will ding your account. If you are selling on multiple platforms it is best to give eBay priority. Also to find a good way to keep track of what has sold and end unavailable items quickly. Good luck with your selling!

Hopefully, they are understanding and will agree to a cancellation, if they do, your seller performance will not be affected.
Click on the sold item, top left click on View order Details.
From More Actions on the right select Cancel this Order, selecting the reason Buyer requests to cancel. This will fully refund them and not harm your seller account.
If they don't agree to the cancellation they could contact Customer Service explain they have not granted the cancellation and were disappointed not to receive their item, eBay could then place a damaging defect on your account, and you could receive negative feedback.
When you list items for sale eBay request you do not list them elsewhere at the same time for the very reason you have found, eBay do not like disappointed buyers, they tend not to come back to buy, hence the penalties you might pay!
