I've just started selling and don't yet have a printer, so I can't use click and collect (bar codes and scanning etc). I cannot see how to switch it off as an option when listing.
I guess eBay might send me a QR code to be scanned at the post office? So perhaps that's an option.
In the meantime can I switch off the click and collect as an option?

If you don't want to use Click and Collect you need to change the option in your account preferences:

If you are selling as a private seller, I assume you are using Simple Delivery.
click and collect is no different to a delivery to someone’s home. You get an address, and a label.
this is either Royal Mail or Evri. I know at least for Royal Mail you get a QR code to print the label off at the post office.
there doesn’t seem to be any reason you can use click and collect.

Click & Collect is a service provided to buyers so doesn't really make any difference to you as a seller.
With Simple Delivery you will receive a QR code, as well as a label, which you can take to a Post Office, Collect+ store, or Royal Mail delivery office to be scanned and the label printed for you. Alternatively, you can book a collection with Royal Mail through eBay and Royal Mail will then bring the label to you.

It's tech issues. I'd rather just write a label out myself until I get going more regularly. That's why I was wondering if I could switch off click and collect as an option.

Click and collect makes no difference to having a printer [and vice-versa].
You will need to use printed labels to send to buyer for anything sold using Simple Delivery e.g. posted to their house.
Many Post Offices or Evri drop off points have a printer to print the label - you will need the QR code or character code.
And you can arrange RM to collect their packets and bring a label with them.
