i've accepted several offers over the weekend and one this morning and none of the buyers have paid for the items. is there an issue with the process now or have eBay gone the way of Vinted and Depop and made offers no longer binding?

Offers are never binding, its up to the buyer if they want to accept at which point they will pay.
You could update your buyer rules, if you haven't which may reduce this issue, but leads to other problems.

Are any of these Offers from Overseas buyers? Or were they from Make Offer feature in Messaging? eBay usually insists normal UK Offers pay straight away, but they give International Buyers a few days to sort out payment options.
BTW at eBay USA Open they announced that all Offers will be concentrated into Messaging in the future. I hope it comes to eBay UK too!

Might not be the same issue, but I brought up a glitch with eBay a few weeks ago - when we accept offers, the listing ends and the items shows in unpaid. And people pay, without failure. And then it moves to awaiting despatch. We are able to send invoices for multi buys that don't automatically combine postage. Exactly as you might expect.
If, however, we accept COUNTER offers, the items remain in our shop stock and remain visible and another person can buy the item until the item is paid for by the buyer. And they are rarely paid for, unless we contact the buyer to let them know.
EBay said they would sort it and I'm still waiting.
