Please can someone offer some advice.
I've read that we can opt out of the Simple Delivery and still use Custom postage but I cant see the Custom Postage option anymore when adding a listing ?
I've tried this on new listings, revising a listing, listing a similar item, and on listings under £10.
Is there still a way of using Custom Postage or has it completely gone ?
Any advice appreciated.

Parcelforce isn't exactly known for its good value for money propositions... the last time I used Parcelforce 24, it wasn't actually a 24 hour service.
FedEx via Parcel2Go is better value for money than Parcelforce and accepts 90 x 60 x 60cm.
UPS via parcel2go is cheaper than Parcelforce and accepts up to 80cm. You could probably book longer items direct from UPS but they'd cost more
Parcelforce is almost £10 for a 1kg parcel! Parcelforce prices from the Post Office are more expensive still.
I don't think many customers would want to pay almost £10 more in postage just to avoid Evri. I know I certainly wouldn't.

Pardon? I never mentioned cost nor did you previously. Your post was about size.

If you are thinking of selling a low price item using custom postage just forget it. You'll just waste your life. I tried every way possible way to list a tiny coin at £3.50p plus basic postage and there was no way on earth that ebay was going to let me. They simply insisted that the buyer or me paid £2.72p postage which with their commission on top meant the buyer had to pay 80% more than my price for the item. Ebay promise lots but too much of it is empty promises.

I have the same problem what on earth have ebay done to make this service so complex it used to be so simple but ebay keep shifting the goalposts for some reason in the meantime I will continue pulling my hair out until I find a fix for this

I couldn't, it wouldn't let me. Smallest allowable package for my 2.2gram coin was up to 1 kg.

It seems to me that it depends what you sell. I took someone's advice and listed my tiny coin as a postcard, it allowed 87p post. Then, having set it all up I changed the category to coins at the last second and it immediately changed the postage to £2.72p. It seems some categories like stamps and postcards allow it but others don't. If so ebay ought to state it, not cause us to wate out time finding out the hard way.

I am still unable to list/relist postcards without the system defaulting to SIMPLE DELIVERY..
Any items weighing less than 100grams and able to fit in a letter size envelope according to eBay are exempt from SIMPLE DELIVERY.
My postcards fit this criteria …
It has been suggested there is a ….'Work Around.'..i.e. decieve the system...
Sorry but why should this be necessary... after all this New Simple idea was introduced over 3months ago...maybe get some new people to have a look at it.

The workaround is not there to ' deceive the system', you are inferring something here is deceitful, which it is not. The SD system has a technical issue failure, that is, Custom Postage which should be available for the items like yours, exempt from Simple Delivery, is simply ( sorry no pun intended!) not showing.
It's not deceiving, just a link to help those like yourself , to be able to list items meanwhile whilst eBay are working how to resolve the issue, no denying they're taking their time !🙄
So, if you wish to list your postcards now, use this successful workaround many are using, from the link below Go to Solution and use Rick's answer. It can also be adapted to lightweight items like yours.

Yes, I fully agree, i post fishing rods and now the custom choose your own postage option has gone it is impossible to find an option to post them.
Like you i use Parcel force and can't post with the over ride of just over £5! it cost's at least £11 to post.
Ebay worked fine but they have gone completely crazy and messed everything up.
They used to have a system where a buyer from abroad contacted you for a postage cost then you sent them an invoice so they could pay, they have got rid of that to.
I think they will find there will be a mass exodus from ebay and they will lose all of their custom
and they won't come back.

The postcards sub sub category under railwayana for example which some of your items are under doesn’t allow custom postage as you’d think it might
Collectables/ postcards and supplies/ is a category you can use and custom will come up
ebay haven’t done a thorough job here

I just did a dummy listing for a “fishing rod”
didnt put in any size dimensions
it defaulted to oversized postage, and custom options for yodel parcelforce and evri

As Simple Delivery is changing weekly.
My relative lists items now that are under £10.00 for Letter 100g only. Anything above a normal sized letter is sent by SD.
Last month eBay separated the Letter 100g from Large Letter 100g in their postage options, they did mention this in their many notifications.

You can only use custom on items that are all of these three
under £10 under 100g and fit into a letter or LL and in certain eBay designated categories see list
OR , though it doesn’t work at the moment 🙄, items that are over medium parcel size
