I have a buyer who wants to pay cash on collection I obviously didn't enter cash as an option on the listing!! He won't get a code obviously What can I do??

Cash is best for a collection item, after the item has been purchased first, and your buyer has come, inspected and paid in cash for it, this is how to finalise that transaction.
It is not mandatory to use that code. Indeed, many sellers do not use the app to run their seller accounts, and that is needed here for that code.
You need to do this now, only on the Seller Hub
go to Orders >> Awaiting Postage / Print Postage label, and then click the box on the left of the item.

Then you should see a drop down menu, above the listings, with the title "More" use the drop down menu there and select , Mark as paid and Mark as Dispatched.
Dispatched is eBay's wording for a collected item.

If you offer "Collection in person" as a "delivery" option cash is required as a payment method (although it can't be insisted on).
You need to revise the listing so that it offers collection in person. Otherwise, if the buyer pays, collects then opens an "Item Not Received" case you will have virtually no defence against it.

As mentioned that only works if you're both using the app. When you said "I obviously didn't enter cash as an option on the listing" I thought it must have been a delivery-only item.
Any item listed with "Collection in person" as an option automatically has "Cash on collection" available as a payment method - this option can't be removed - in addition to eBay's managed payments. Cash is preferable for such items as the buyer is not covered by eBay's Money Back Guarantee policy as eBay has no way of actually giving the buyer their money back.

As a buyer without the app I get a code by email when ordering collection in person. It's also visible on the order details. The only excuse for not having a code is they didn't know where to look, in which case tell them. Don't hand over the item if they don't give you the code.

In 'My eBay' go to 'selling' the item will be marked 'waiting for payment'. Click on the item. On the blue bar at the bottom which says 'send payment reminder' click on the small arrow on the right hand side and you can select 'payment received'. Not done it yet, wish me luck!

I have the same situation but eBay won't let me send the buyer an address for pick up or a phone number as the item is still showing 'awaiting payment.' The buyer, perfectly reasonably, wants to pay cash. How do I deal with this? It seems the only way I can message the pick up details is to mark the item as 'payment recieved' which doesn't feel right because it hasn't been...

No they don't,a seller has to tick the box before listing to add that option.That's why there are so many issues with collection only items.See post 2 of 13 and see sold listings.

Hmmm...something has changed but it still doesn't work properly. I tried to edit the payment policy that applies to my listings with collection in person and saw this:
That policy was auto-created by eBay when I first created a listing with collection in person; I was basically forced to have cash on collection as a payment option. I actually didn't want cash as a payment option - it's easier administratively for our business if the item is paid for prior to collection. It seems now I can turn off the "Cash on pickup" option but if I tick the "Require immediate payment" option (all my listings are BINs) I see this when I try to save a listing with collection as a "delivery" option:
So it is still treated as if the cash on collection box is ticked. There is a link to a page where eligible payment methods are explained - the link to find about about payment options (https://www.ebay.co.uk/help/selling/listings/choosing-get-paid?id=4106) now 301s to this page. According to the Wayback Machine this started happening in May last year. I believe that was the policy page where eBay stated cash was a mandatory payment option for items collected in person; it seems they changed that requirement at some point last year.

According to this page:
"Payment options for local collection
In your payment options, select Cash on collection and any other payment methods you'd like to accept. You'll need to offer buyers at least one of the approved electronic payment methods, and you cannot discourage buyers from using any payment method you specified in the listing."
Which suggests cash on collection and managed payments are required options for collection items; note the emphasis is present in the article - I didn't add it. I'm guessing that page hasn't been updated yet.

why not exchange that wad of money for your item ?
what do you need a code for ? especially if buyer doesn't have one.
however all that normalacy is about to change on October 1st
from that date onwards seller is expected to hand over the item but does not get any money until buyer goes home and tells ebay they have received their item.
and even then ebay will make you refund the buyer in full if buyer makes anitem not as described claim (for whatever reason they fancy) upto 30 days after collecting the item.
let's see how that works out when millions of sellers quit selling on ebay.
those sellers are usually also buyers, so ebay is going to loose millions of buyers as well as millions of sellers.
