So as my funds are tied up in a sale where the item hasn’t moved since I posted it last Saturday what is the process for claiming compensation? I saw on the Royal Mail website you have to have evidence of the original value of the item sold and it’s actually more than what I sold it for so would they refund it from that value or eBay’s sold value? Thank you

Where are you seeing this tracking? Have you actually checked Royal Mail's Track & Trace online? Does it say the item has not yet been delivered there? eBay's tracking is slow to update it's the RM tracking on their website that matters.
However, if it doesn't show delivery there, you just need to wait 14 days for your payout to be released.
Should your buyer open a case for item not received you will have to fully refund them if there is no tracking to prove otherwise. Do not message the buyer asking if the item has arrived, they'll soon late you know .
Should you later require compensation from Royal Mail for a lost parcel, you need a claim form ( can be done online) attach the proof of posting and if you have the receipt for the cost of the item lost. If not, print off the order details showing the cost and that's the amount you'll receive.

I’ve checked the Royal Mail track and trace every day and it’s stuck on “accepted at ParcelShop”. I think I can claim from 2nd April.

Royal Mail usually have a waiting time of 15 days from posting, before you can claim for a lost item.
Has your buyer let you know they have not received their item? You need to refund them first .

If I have to refund that’s fine. They haven’t recieved yet as far as I know. I’m sure they’ll tell me. I’m just anticipating.

Let's hope there was a glitch with RM / Parcel Force tracking, as there often is with eBay's, and the item will be delivered.
As said, do not contact the buyer, they'll soon enough contact you, if anything is amiss !

The most likely scenario here is that the item has been delivered but tracking has not updated.
If tracking doesn't show delivered, you will be paid 14 days after the sale.
