Is there any way to revert to the previous version of eBay? The current Sell section is a nightmare—I can't find what I've sold. The previous version was so simple and useful.

Are you referring to the Seller Hub?

Go top right to My eBay >>  Selling.

On the page which appears again near top right should be Opt Out of Seller Hub.

Not sure if it's a permanent ' Opt Out'.
