So usually when I sell multiple items to a buyer I send them an invoice and adjust the postage accordingly - there is no such option there at the moment - there is a link to combine items so I click on that and then try and collate them there and get this message

What if you want to give a discount, so a lower postage price than Ebay has calculated. There really should be the option to manually adjust.

I am a privat sellar, I dont see any where i can say how much weight each item is. 1 item is about 325g , so it should be possible to send at least 5 items in a small parcel up to 2kg, for 5 items Ebay charges the customer about £6.65 that £3.27 more than necessary, they must be raking in taking their cut.
Last week i sent a medium parcel , 13 items, charged 12.47 by e-bay. should have cost 6.95 up to 10kg.

As mentioned in earlier replies, I have been given this solution from customer support:
Ask buyer to pay separately for each item. (Full whack separate postage)
Generate postage label for ONE item.
Manually add that tracking number to other items.
Buyer will be refunded the postage for the items that a label was not generated for, "within a few days of delivery".
The irony of this being called "simple" delivery.
Oh, and I was given the generous option to opt-out of simple delivery to retain full control over postage costs. The only hitch is that I would need a time machine to take me back to the point I created the auctions. Brilliant.

Hi, yes this seems to be the only way now. I just wonder if the Post Office realises how much they are getting ripped off with having to accept parcels hugely overweight for the postage paid!

You are correct. There is no way to manually add it, despite the app prompting me "It's time to send your item. Already dispatched? Add tracking details."
I hope the buyer can flag it as received, otherwise eBay will think I just never sent it.

Sorry, there's no 'received' button for the buyer to push.
Even (pos.) feedback is not taken as proof of delivery. ( because it is easier than you might expect to leave feedback on the wrong sale...)
