I hadn't sold an item on eBay for a while, and so ignored the pre-paid label and sent the item independently via Royal Mail signed for. The item has been delivered and signed for, but my funds remain pending as Ebay hasn't recognised that the item has been sent and received. I have messaged the buyer several times but he/she has failed to respond. Meanwhile, my funds remain in limbo. How can I rectify this situation, please?

No point messaging the buyer, they cannot mark the item as received, only to leave you feedback which releases payouts sooner if the value if £25 or less.
Under the new Simple Delivery system, you need to buy the SD labels, which then automatically state the item is dispatched, and adds the tracking number.
When the tracking shows delivery, your payout is released 2 days after that delivery date.
With no tracking, payouts are held for a minimum of 14 days. If you are a returning seller, they may be held longer, up to 30 days.

You can try requesting a call back and giving them the tracking number. Otherwise it will be a 14 day wait for payment.

Simply ignoring something just because you don't like it is never likely to end well.
We all have to decide if e-Bay is suitable for are requirements and if not don't use it; we can't try and bend it to our needs/desires and expect it to work for us.
All you can do now is wait, and hope.

I've not tried it, but another member has said there is an option to change the tracking number of the orders page - I'll try and find the link. If I remember correctly it was the "list of orders" page rather than the single order page.
And another member had an issue with getting funds released when the buyer left feedback, before the order was updated as delivered in ebay; (when the relevant condition was needing both.)

This should only really be used for items which you can't post using SD, but I think there is/was an option something like "I didn't know about SD" which you might be ok using a small number of times.
