Yes, you can do that, but it makes the Royal Mail option more expensive if you only offer that. You might be happier, but your potential buyers may not.

Agreed. Most people that have bought from me would pay double the postal charge NOT to use Evri. That company really is appalling.

'I find my buyers prefer to pay a bit more for postage rather than use evri and have their parcel go missing...'
------------------------------------------------------------------------------------------------------------------
Yes, it's unfortunate that the buyer is not able to see *which* courier they will be getting when the choose their postage (they only get the choice of 'standard' or 'express'. the supplier of those is undisclosed 🙁)
Perhaps because ebay has got a better (i.e. cheaper or more profit-making) contract with evri than with RM.
During the contract negotiations, ebay will definitely have *known* about evri's dreadful reputation (probably why they were cheaper....) but don't want the buyers to be able to swerve their services...☹️

Turn off the evri option and your buyers won't get a choice!

'turn off the evri option and your buyers won't get a choice!'
-----------------------------------------------------------------------------------------------------------------
Oh yes, the seller has got that choice.
And if the seller really hates Evri it might be worth putting a line in the description to tell the buyer it *won't* be delivered by Evri.
But without that, the buyer has no way of knowing who will be delivering their item...

They still might. As per eBay:
"In certain cases, if your preferred carrier can't accept your item, we'll provide you with a label for a carrier you've opted out of in your settings. For example, if your parcel exceeds your preferred carrier's size or weight limits, we may send your item with an alternative carrier."

The number of packages which Royal Mail genuinely can't accept will be tiny, and to be fair, not the fault of eBay or SD.
It will be interesting, however, how eBay interprets this if they can't give Evri the level of business they've contracted to....
I suspect that, at some time in the future, eBay may amend that condition to allow them to select Evri if "eBay believes they will provide a more suitable service", or something along these lines.

What is also very important to remember with Evri Postal Service, is their list of items which are prohibited and most important is which items are excluded from compensation before you send.
Their full list can be seen here, and you'll be both surprised and disgusted at whats on there -
https://www.evri.com/send/what-i-can-and-cannot-send
For example, Sellers of 'Vinyl Records' won't receive even a penny in compensation if they get damaged, destroyed, lost or stolen from Evri
So as a Vinyl Records seller myself, then Evri is completely out of the question - and I bet that 99.9% of Private Sellers on Ebay won't have even bothered to research that list, or realize it even exists. So many of those shall only find out that lesson the hard way.
Maybe Ebay should say :-
(Option 1) - Royal Mail
(Option 2) -Evri [USE AT YOUR OWN PERIL] !!!

Yes, sellers do need to comply with the carrier's list of prohibited/restricted items. However, as far as compensation is concerned eBay is providing their own cover, up to £750, so the carrier's list of non-compensated items is, therfore, not relevant.

Not convinced that ebay won't take the easy 'inadequate packaging' route when it comes to actually coughing up for the promised cover though....
(Photos and filming have never been acceptable as proof of anything with ebay)
