ParcelForce and Royal have merged this week, no problem apart from when I went online to book collections with ParcelForce the website has changed completely. You dont enter parcels sizes anymore, just its weight which for us means a fair hike in prices so we're going back to UPS for large/heavy deliveries.
First task this morning is to edit all our postage options on many of our listings from ParcelForce 24 to UPS 24 hour and what have we found? Ebay have changed the parcel edit box from change service to a list of three postage policy options? I can't see anyway of changing the service from PF to UPS, another ebay example of messing with something that isn't broken.
Any help with this would be much appreciated.

As far as I understand postage policies from being forced to look at them the other day you will need to create another postage policy ( name it UPS so that you can select it again easily )
If you click in the box you get a list of your policies, if you click on the three dots ( stupid idea as three dots mean nothing to me) you then get the option of create a new policy.
This isn't something that I have ever dealt with before so I may not be correct but is worth a try.

Not had time yet, it's going to take some time as well, we have nearly 1000 listings. Easy before, just press change service and there was endless lists of courier options, now we have to input manually???

Just change the courier service on your existing policies. You don't need to create new ones.
Go in to accounts - business policies - postage.
Click on your PF policy - rename it - scroll to primary service -click on 3 dots and change the courier.
Once you have saved this, all of your listings in this policy will change.
