Just to be clear HMRC's recent changes to the law are why eBay ask for NI numbers. I bet they would prefer not to, as many Private Sellers feel like you do.

And Simple Delivery really does live up to its name. SD is better for items like your Bvlgari sale because the cover is £750, if it is lost/damaged eBay pay the refund and let you keep the sale price, and they protect you against Negative/Neutral feedback related to delivery.
