When buyer arranges their own courier

I’ve sold an item . Buyer is sending their own courier to collect it … so I have no tracking number to upload … how do I guarantee  the funds will be released to me .. once the buyer receives

The buyer should send you the collection code before you let the courier take the item.

Otherwise you will wait for the same length of time as for an untracked posted parcel.
