I bought an iPhone 13pro, but after auction ended, my winning purchase stated as Cancelled. Why does this happen?

Odds are the seller didn't get what they wanted for it and cancelled the transaction. If you've paid a refund will have been issued automatically and the money returns to source usually within a week.
If they have cancelled (you shouid receive a notification email telling you what happened) you can report them to ebay although they can't be made to sell to you. Scroll down to "Report a seller" on here:https://www.ebay.co.uk/help/buying/resolving-issues-sellers/report-issue-seller?id=4022
