The buyer didn’t received the item that I sent, it’s already past delivery date and the tracking still shows ‘we got your item at sorting hub’ since 23rd September, it’s already been a week now with no change in status. What should I do in this case ?

Tell your buyer to open a case. If the item was sent by Simple Delivery ebay will take care of it and will refund your buyer with no detriment to your account.
