If someone has asked to collect you just send them a revised invoice before they pay with the postage removed. On My eBay click on More Actions > Send Payment Details, far right of item on your sold page. Remove the postage and submit (don't tick "reset" if it's there).
Ideally ask for cash when they come. Afterwards you can mark as dispatched, also via More Actions, right of item.
