I am a private seller and have just been switched completely to Simple Delivery... I used to have 4 days handling time set and during the transition to SD I had a look at the options for listing and I thought in listing preferences that I could set 1 to 3 days handling time, I now can't find it. Has even that option been pulled with SD?
Confused because the "Help" pages often say you need to set your handling time when you list. I can't find that option at account level either.

The option to set it for same day to three days is showing for me.

Are you using the app or mobile browser? Some options are just not available on those devices, switch if you can to a laptop / PC and use Chrome, that combo seems to work well.
Then, on your listing form under Simple Delivery scroll down past Simple Delivery >> Who pays and below the postage cost showing there is:
Preferences >> Your settings. To the far right of this click on the pencil icon and a pop up will appear to select Same day or 1 - 3 day dispatch time.

Normally on a windows 11 PC using Google Chrome. It isn't in the preference box, checked on Android in browser and it is the same. Yes click on the "pencil" under postage a box is displayed and handling time or similar isn't there. I can do a screen shot when I get home.

I'm using Firefox on Debian Linux.

Win 11, Google Chrome - I get this for the same box. Same with chrome Android browser
Obviously we are not being served the same page! Maybe like the SD rollout it is staggered or is there a difference with our accounts.
As an ex IT developer/consultant I would hate to create user manuals for this inconsistant system
Firefox with a different ebay account was very different again with Delivery details holding my missing Despatch time. On my first ebay account Delivery details holds just the Postage Policy showing my old custom postage rates and nothing else.
Later I may try logging on firefox with my first account and see what happens.

Having done some testing with the Handling time I can confirm that the problem of not going to 3 days is with my main account, changing browsers or platforms does not give me the option however on another account I set up ages ago with only one purchase on I do get the option to go to three days?
