To list items for sale and to be able to receive payouts from those sales, you have to register for eBay's Managed Payments.
You need to provide eBay with details of a bank account and have this account verified. The usual method here, is for eBay to send 2 micro deposits into that nominated bank account for you to receive, and confirm to eBay.
Once this is completed, you will be able to list items for sale, and receive payouts from those sales.
This will show you how to register for eBay's Managed Payments.

For postage you select the postage and service you wish to use in the Delivery Details, and Domestic Postage sections.

My Ebay bank account has already been verified before my first sale, but, as that sale and payment was completed by a collection in person by the buyer, I am unfamiliar with the process of payment for a much smaller item went by post.

All you payouts from sales will now go into your eBay Balance.
As a new seller your payouts may be held for 21 days and released sooner when tracking shows delivery for those posted items.
When they show ' Available' in your Payment Summary, Payment tab near the top of your eBay homepage if you wish to withdraw that payout, then you need to do this manually this way:
Strangely some members have found this works on some devices and not on others, so worth trying on apps / PC and laptops use Chrome, until you find the combination that works for you.
Click on Payments >> Summary then any payout available for immediate withdrawal, is available for you, in a big blue banner.
Click on the > arrow, top right you may need to log in again, or even verify your account by receiving a text or email code.
Your eBay balance will show at the top, click on withdraw bottom right.
On the pop up screen which appears, at the top, there's a large, bolder £ sign, and flashing sign beside it. There, you add the amount you wish to withdraw. At the bottom.... Withdraw Now click on this.
A notification appears... Your Money is on its Way. Click on this and then on Done.
Money is then sent to your nominated bank account and it will depend on your banks processing times, as to when you are able to withdraw the money. Some banks are faster than others.

When does the buyer pay. And how do I, and indeed ebay, know when the package has been delivered to it's destination.

The buyer pays once they have brought the item. Then you parcel up the item and either buy a postage label from ebay and post it or you can taje it to the post office to get a label and post it. If brought through ebay the tracking is added to your sale, if you buy from the post office you add the tracking yourself. As long as its scanned by the postie it will show when it is delivered to the buyer.

I’m guessing that you have not sent the parcel yet. Have you?
Look at the email (it starts ‘You made the sale’ ) that you got about the order. It will tell you if the buyer has paid and whether to wait for payment or to send the parcel.

No I haven't sent anything yet, I've not actually listed the item yet. As this would only be my second listing, and the first using the mail, I'm trying to find out what the procedures are, for example, how do I go about tracking it, so that I and ebay know it has reached it's destination, and when and how does the buyer pay. Thanks.

Have you used the listing form before?
You can tick a box to choose between immediate payment or payment within four days when you list a buy-it-now. The buyer also has four days to pay an auction style listing. Do not post the item until the buyer has paid and do not comply with any messages asking you to post to any address other than the one given on the order. (If the buyer does not pay don’t message them, they’ll be getting plenty of reminders to pay but are ignoring them) just cancel the order on the fourth day using ‘buyer did not pay’ as the reason and relist the item.
eBay will tell you when the buyer has paid and you will receive an unmissable big red ‘PAID, POST NOW’ notification. This does not mean that you will be paid immediately and as a new seller your payouts will likely be held for 30 days, but you should send the parcel when instructed to. You will get an estimated date for your payout and it will appear in your ebay ‘wallet’.
So.. go to the order and get a label using the big blue ‘buy label’ button or buy your own label from your choice of carrier and add the tracking number to the order manually in the space provided. If you choose to send untracked remember to mark the item ‘dispatched’. The tracking information will be visible on the order. Send the parcel within your chosen handling time.
That’s it. You don’t need to waste your time messaging the buyer to tell them you’ve sent it or check the tracking for delivery, the buyer will let you know soon enough if there’s a problem!
I’ve probably missed some points but like most things its easier to do than explain and you’ll learn as you go along if you just read everything carefully. Good luck!

The buyer of your posted item will pay you through eBay checkout, just as the collected item should have been.

Probably my easiest option of delivery would be to use Royal Mail's Tracker system from my local post office.
I think this has to be signed for at the other end to show the item has been delivered.
But it still begs the question, how does the buyer inform ebay that the item has been successfully delivered.

They don't.
You add the tracking number when you mark the order as dispatched, and when the item has been delivered the tracking number will update to show that the order has been delivered.

I think you’re overthinking this. At this stage all you need to do is list the item as clearly as you can, both photos and description and follow the instructions when it sells. Most importantly add the tracking number to the order, send in a timely manner and forget it. You’ll get an email when you’re paid.

Do you mind me asking .... how did the first buyer (who collected) pay for the item? If it *wasn't* through the ebay process (i.e. he paid cash) how did he know where to find you?

No, cash isn't allowed these days. he had to pay upfront to Ebay, once that had happened I was allowed to pass over my address, he came to inspect the item, was happy, so he passed me a collection code which I then passed to Ebay. A few days later the money was in my account.

One tip, never send any message to a buyer asking if it has been delivered, they'll soon tell you if it hasn't.
Post your item mark it as dispatched, add that tracking number and that's all you have to do.
Once tracking shows delivery your payout will be released. After February the 4th this will be 2 days after tracking shows delivery, and if there is no tracking, payout for that item will be held for 14 days before release.
