So I listed an item thinking it would go Large Letter but with the packaging required it has now ended up being a small parcel size. I usually get it right but have slipped up this time!
How do I get a Simples label that suits the correct size of the item now?

Go to your listing page.
Press 'Edit' of the item and change the postage to the size.

If Large Letter was the size recommended by eBay when listing the item then you can still go ahead and use the label. Due to the way the contract between eBay and the carrier works it will still be accepted by the carrier and there won't be any surcharges. If you changed the size from that recommended by eBay at the time of listing then eBay does reserve the right to charge extra if the parcel is underdeclared.

If you've repackaged it you should cancel/refund with buyer's agreement (via the dropdown menu for the item on your orders page) and relist with correct postage for the buyer to buy again.

You don't need to. As per eBay:
"Can I change the recommended parcel size?
Yes. If you think our recommended parcel size is incorrect, you can select a different size when listing your item. If you don’t use the recommended parcel size, and your item ends up exceeding the maximum size and weight of the label, you may be responsible for covering the additional costs to send your item. This includes the difference between the parcel size and an administration fee of £1 including VAT.
If you use the recommended parcel size and your item exceeds the maximum size and weight of the label, you won’t be charged any additional costs. Just go ahead and use the Simple Delivery postage label. The courier will accept your package providing it remains within the maximum weight and dimensions for the service."

Why not proceed with the sale and chalk it up to experience? If it were me I would pay out of pocket to send it, upload the new tracking number, and initiate a refund for the unused SD label (if you paid for it).

Well, after scrutinising the Help Pages, I was no nearer to finding a way to pay for another label for the correct size of parcel so went onto Chatbot, got a live person and explained and asked them to give me the steps to printing a new label for small parcel and afterwards I would claim for the unused LL label. I was advised (after disappearing for ages whilst he tried to find the solution), to go ahead and use the label already allocated. I advised the agent I didn't feel comfortable with using a LL label for a small parcel but was assured that my parcel would be accepted at the PO (and it was) as there was an agreement with couriers taking Simple Delivery. I stated I didn't want to get a fine, etc., but was assured that I would have a transcript of the conversation.
It's only one where I've slipped up so will err on the side of caution for anything slightly under LL size. Every day is a school day!

When you create a listing under Simple Delivery eBay guesses the size and weight of the package. Even if eBay guesses wrong - i.e. eBay provides a Large Letter label for something Small Parcel size - the label can still be used without issue. It is only if the item is too large for the service - i.e. it is larger than Medium Parcel where Royal Mail is concerned - that a PO counter would refuse the item.
A seller is only held liable for an underdeclared label if they did not use the recommended parcel size when listing the item.

This situation is my eternal problem with simple delivery. I mostly sell books and a large number of them, when in a proper cardboard mailer, are borderline large letter / small parcel. I can't tell till they are packaged. In the good old days, it was ridiculous how delighted I was when my item would fit within that magical 2.5 cm depth limit, and therefore pass as a large letter, saving me a few pennies, lol. Now, due to simple delivery I have to set nearly all of them as parcel, out of caution, because you can't modify the label later. Since I cover the postage myself, in an attempt to retain a degree of control over it, the excess postage fees I have paid (for parcels that actually pass as large letter) is getting annoying.
Plus, at a width of say 2.7 cm and under 400g, they are often one of the smallest items in the dreaded parcel bag. Before anyone asks, I can't play dumb, because my post office scans that market place bar-code, yet still insists on checking the weight and dimensions of my items. In terms of paying for new postage and claiming the unused simple delivery postage back, I know the procedure, but has anyone actually been refunded for a SD label for a posted item ? All I see are countless posts saying the answer is no. Now, don't get me started on what happens to the postage when a buyer buys multiple items, lol
