To be clear this is a purchase from Royal Mail website, not an integrated purchase through the Ebay UK website
I usually purchase over the PO counter, my understanding is when they process my handed over parcel they click an Ebay button which advises the system (im guessing electronically) its an Ebay transaction and because the parcel is going to the EU in this case, electronically it records the fact VAT has been paid and informs IM2760000742 code applies.
However today I need to process the order through the Royal Mail website, simple enough but I dont see anywhere in the process where I advise its a Ebay transaction and tax has been paid.
Do I just stick a label on the package advising tax paid. VAT PAID IOSS IM2760000742

The IOSS customs data is intended to be electronic - i.e. contained in a barcode. Sticking a label on doesn't meet the requirements of IOSS.
Is this a Letter, Large Letter, Small Parcel etc? Also, what is the destination country?

Genuinely I didnt, I was expecting something like that as I was pretty sure that electronically it would be recordered somewhere. Hence the post.
Small parcel, France, will go have a coffee and open my eyes a bit more!

Just for your info, when buying via click and drop as @4_bathrooms says thats the bit for IOSS. Also on the label under the barcode there is always the word IOSS mentioned so if its missing it will mean data not transmitted correctly by RM.
At the Post office, yes customs data is now electronically transmitted, however if you can get from your PO a sheet of the IOSS stickers and just write ebay on it that is also recommended. When the postmaster goes through the process, the label is applied and then there is always now customs data (it can take a couple of minutes to do) but as you say one of the buttons says was the item sold on a marketplace, and from memory there are 4 or 5 companies stored including Ebay. Again to ensure this has been done correctly always check the cash receipt bit it will have the price and underneath it should have something like ICDC Horizon and a value of £0.00 - that means that the data has been electronically submitted.
