I have recently brought a watch and after a couple of days it had yet not been shipped which i throught was a but odd. I tried contacting the seller but found out the seller deleted their account but still took my money and havent shipped the item, i have requested a cancellation however the seller is no longer listed, how do i get my money back?

I am pretty sure i paid via ebay, i have had no contact from ebay saying about the seller but i will give it a couple more days and see what happens but thank you

A seller does not have to accept a cancellation, and depending on their dispatch time perhaps haven't posted it yet.
However, it's worrying when you say the seller has been removed, if they have been removed , only eBay can do this if they've been in a recent transaction such as yours.
I would contact eBay Customer Services and ask if they can confirm that this seller is still active or unregistered, if the latter perhaps they can do the refund early for you.
If they are still active you'll have to wait and see if the item is delivered. If it isn't, one day after the item's last estimated date for delivery, then you can open a case for item not received for a full refund.
I do recommend contacting Customer Services very first thing in the mornings when the lines first opn at 8 a.m. as there's more chance of Dublin answering.

Did you pay for the item via eBay? In other words did you complete the payment via eBay's website or eBay's app? This means you didn't pay the seller directly via PayPal nor any other payment method.
If you paid via eBay you will be shown estimated delivery dates in the purchase record - you can open an item not received (INR) case the day after the latest date shown. On the third day after opening the case there will be a link that states "Ask eBay to step in" - you will be all but guaranteed a refund under eBay's Money Back Guarantee policy.
In most cases sellers cannot simply delete their accounts; a seller's account remains active for 90-120 days after the last sale they made. If their account states "No longer a registered user" it means eBay have closed their account. eBay normally contacts affected buyers and sellers when they have done this.

When i try to go on the sellers account it says 'sorry this user wasnt found' amd the item listed is gone

Looks like eBay have removed the seller contact CS tomorrow morning when Dublin will hopefully answer if you call first thing at 8 a.m. as above , they'll confirm if the seller is active or not , and how to proceed for your refund.
You may not need to wait for that last estimated date for delivery if the seller is no longer active on eBay.

So when you go into your 'purchase history' page and look at the item you've bought, when you click on the seller's name, ebay says 'user not found' ...? and the item isn't found either?
How many days ago did you buy this watch?

I brought the watch on the 21st of September. And yes when i click on the product itself it says ' this item isnt here' then when i click on the sellers username it says ' sorry this user wasnt found'

When you go into the purchase record there should be a section showing "Delivery". As long as the first entry in the progress bar says "Paid" you are covered by eBay's Money Back Guarantee:
