The seller told me she hadn't sold anything on ebay for years and said it was an honest mistake. She has only refunded my postage so it's showing as a refund. Which if course it was, but it wasn't the entire refund. It was just the postage. Now the seller is asking me to please help resolve the situation. I requested a refund but it's saying I have had a refund. What on earth do I do to resolve this?

What happened before the refund?
Did you return an item?
Was it an item not received?
Did you open a case through Ebay?

Here's what I do as a Buyer with a faulty, damaged or not-as described item:
-Put the Seller on my Blocked List
-Send a courtesy email to the Seller explaining the situation, and asking what they would like me to do.
-If they don't have an immediate solution, I open a Return Case and only message within that Case.
-Expedite to eBay on the 4th day.
Don't waste your time messaging with the Seller if a solution isn't immediate. Just open a case and let eBay take the weight. That's what we pay them for!

Sending a partial refund does not stop another partial refund or a full refund from being sent.
OP have you opened a return case? Or are you unable to do so?
(As a seller I sent a small partial refund for combined shipping to someone earlier today. I've just looked and the option to give another refund is still there.)

If you block the seller before sending a message and you have the "Don't allow blocked buyers* to contact me" box checked in your buyer requirements the seller will not be able to answer unless you open a case.
*Although the box says "buyers" it should really read "members".
