I've been trying to buy some things from UK sellers. When browsing, I can see the shipping costs. Inside the listing, it just tells me to contact the seller for shipping costs.
It is also impossible to buy, when clicking Buy It Now it just says: item does not ship to Hungary.
After contacting some of these sellers, it turns out they all have ebay global shipping enabled, and everything seems to be fine on their end. But it no longer works for me.
What can be done? A google search reveals that others are having similar issues, some for about 2 months! Does ebay even know there is a problem?

Are you trying to buy using the site you are on now, that is, www.ebay.co.uk ?
If so, log out of here, clear cache and cookies, and try from www.ebay.com
If there is still an issue, contact eBay Customer Services, see if they can explain what the issue is as UK GSP does ship to Hungary, as far as I can see.
Contact eBay Customer Services this way, through their help pages.

Unfortunately clearing cookies and ebay.com does not work. I tried switching browsers as well.
Phone app - another laptop is also not a solution.
I contacted ebay via email, calling is not an option for me.

Here in the UK there is no email facility for eBay , it's only a Call Back option, not sure of the facilities you have in Hungary but would be surprised if there is a contactable email for eBay.
Contact eBay Customer Services with the link I have provided above.
The alternative is this. GSP is not mandatory for a seller to use to sell to you.
If there is an issue, send the seller a message if they could relist the item without GSP , and add Hungary to the list of countries they post to. That will allow you to buy the item and will show you the postage you need to pay.

What item are you trying to buy? Depending on the item and other factors, we might not be able to ship it to your location, and then you'd get the message in question. If you share a couple of examples, I can take a look for you no problem.

I am a UK seller and have just found out for second time in 2 months ALL my postage policies have been changed WITHOUT my knowledge from GSP enabled to GSP not enabled. Luckily I only have 25 policies so I have just re-enabled them. I have reported this again. Annoying as a seller as we have no idea this has changed. I had begun to wonder why my international sales had dropped to zero

I've recently encountered an issue with GSP, wondered if it's a known problem or something I've accidentally done?
Essentially, ALL my auction listings are ticked to be included for GSP, and each listing I create I use the 'sell a similiar item' so nothing changes, but in the past two weeks, my listings seem to have randomly fallen into three separate categories but I've made no alterations or edits to the listings and they're all ticked for GSP:- 1 - option for postage indicates I ship to UK only, but the 'revise listing' clearly shows that the GSP is active. It details excluded 'problem' countries e.g. Afghanistan, Yemen etc., but no other exclusions are showing, yet buyers are not given the option to bid, because it's telling them I do not ship to their country.
2 - option for postage indicates that I ship to all countries included in the GSP (this is what I WANT and as far as I know have set all my listings to show!). Bidders are able to bid on these without issue.
3 - option for postage is limited to a fairly random list of about 40 countries, but excludes places like Australia, Canada etc.
I've no idea what's going on, and I cannot seem to edit or alter anything since ALL listings show as GSP applied.
