I'd just open an eBay return, get a label from the seller and return the packaging. Presumably you've already sent them a photo of the damaged contents. I'd print that off and include it.

First open a return case for item not as described, item Does Not Match Description or Photos. Send the seller aa message you cannot return the item because of its condition.
They should refund through the case details within 3 days and without you sending the item back. If 3 days pass with no refund contact eBay Customer Services and explain the condition of the plant makes it impossible to send back.
This is the easiest and quickest way to contact eBay Customer Services, for a Call Back option.

I strongly recommend contacting CS first thing in the morning, 8 a.m. on weekdays, 9 a.m. on weekends as there's more chance of Dublin answering, only speak to them.

As this is a case of item not as described, and not one for damaged in the post the seller will refund.
If they don't after 3 days, that is, there's no return label or refund, you have to escalate on day 4 then eBay step in and force the refund.
If the seller uses delaying tactics insisting the item be sent back, then send the packaging back with the label the seller must provide. Perhaps take a photo of the item and include that too.
I would send a message and photo explaining the condition of those plants, in case the seller wishes to take this further saying item was not returned, you could then direct eBay to the messages and photos of the ' mushy item' !
