Hello! I made an offer on a listing of 2 x guitars last week and the buyer accepted right away, meaning the payment was made. Examining the photos more closely and doing some research online, i suspect one of the two guitars is a fake "Fender" and is of little to no value. I have not collected them yet. If I do collect, do i have any recourse if the item is fake? The seller could just say "I didn't know it was a knock-off" I guess. Is it too late to cancel the purchase and get my money back, or do i have any recourse if i collect them and find out it's not what it was advertised / sold as?

You have a choice. The simplest, if you both cooperate, would be to explain your concerns to the seller, and ask them to cancel the sale. This has to be done and the refund issued through eBay in the usual way.
Alternatively, you can accept the guitars, and if they prove to be not to be as described open a case under eBay's money back guarantee (provided you collected them in person). The seller would have to send you a prepaid return label, as eBay will require. This is quite a strong incentive to the seller to agree to cancel!
If bought both items were sold tothether as a single listing it would be best to cancel or return both, otherwise you would be in the uncertaIn area of trying to arrange a partial refund.

Best to inspect carefully & if not happy, ask for refund.
Were they 2 listings or just 1, if 2 items on same listing, you should reject both.

It was a listing including 2 x guitars. Advertised as one Fender and one Squier (Fender's budget brand) but the headstock on the "Fender" looks slightly off. I asked if the neck was original or were they aware of anything unusual and they replied "not that i am aware of" which didn't fill me with confidence. But as the money has been paid out, I can still refuse the items at the ladies house and request a refund?
