Don't try to read too much into a single incident you have noticed. Odd things happen on eBay and we don't see the whole picture.
eBay removes feedback when either party can show that it contravened eBay's feedback policies. Disclosing personal information is not allowed so mentioning the seller's occupation would have qualified for removal.
Why the seller left positive feedback you don't know. It could have been left by mistake.
