I just sold a cheap item - ebay is telling me to "Post Now" but the buyer is local and is asking me to collect. I'm relatively new to selling - how do I mark my item as will be collected rather than posted just to keep a paper trail etc?

The risk is that you will have no evidence of delivery. Buyer could then get a full refund.
You do not say the value, but to protect yourself, with agreement of buyer, you could cancel the sale and relist for collection. That way buyer gets a code to give to you which will prove delivery.
I see it would be a low value item, so hardly worth going to a lot of trouble for protection. If collected just mark as dispatched, buyer is hardly likely to be a scammer.

Are there any penalties for relisting an item that has technically sold?

Not if you cancel the transaction at buyers request.

Apologies for the subsequent questions.
What happens if the buyer decides that he wants to meet but won't cancel the transaction - should I just post the item?
Either way I imagine it's possible I get negative feedback

Best explain to your buyer that asking for cancellation won't affect them if they wish to collect,as you the seller would need a collection code that the buyer would be sent by email by ebay and handed to you on collection so your both covered.

All of your items say that collection in person is available - this is now the default settiing when you list or relist items.
If you don't want this to show on all of you listings, you can use bulk edit in seller hub to change it.
