Good morning I’ve sold. Car on eBay and payment method was set as cash on collection buyer wants to pay through eBay how do I change payment method when car is already sold

Nope, you cannot, and do not, do this.
For car sales, it's only cash or bank transfer on collection, after inspection of the vehicle.
Accept no other form or payment , it's not safe .

There is no buyer protection on vehicles, and only sure way of seller being protected is payment in cash.
No good allowing another method when if unhappy with purchase buyer could get refund through payment provider.
