Hi
I sold an item the buyer said it hadn’t arrived I’m on holiday so can’t give the information that’s being requested what do I do

When you posted it then the tracking should have been put on the listing immediately
If you bought ebay postage from packlink then it would already be on.
You have to make sure you have the tracking on the dispute.
If the tracking shows delivered or attempted delivery then you would win the dispute
If not then you have to refund and claim off the courier or RM
What information is it that you can not give?

Can't see what information you cannot give. If buyer says not received, then there are only two options, prove delivery or refund.
Ebay does say that tracking needs to be loaded BEFORE a case is opened implying that it is too late to add after case opened. There are enough reminders to add tracking, hardly worth paying for if not used properly.

So you didn't put the tracking number in when you posted it? If you can't get hold of it then you will have to refund. Better to do it yourself than let ebay do it as that gives you a defect.
