I have an issue not covered by anything here. I listed an item with buyer paying postage. The buyer ordered five items but only gets charged for one postage. Why is this? How can I prevent it and whay do I do about the customer who eBay gave this incredible deal to? If eBay can't be contacted and won't service its customers adequately, I'll simply stop using eBay.

It will be how you set up the postage on your multi buy listing. You have to specify a postage cost for each extra item if you want more than the one amount.

This is not an eBay issue, not something an eBay CS rep can help with.
Postage prices for each additional item is something that sellers set up themselves.
Some of your listings have free postage on them, thus any multiple orders will have the same unless you add a postage price for each additional item.
As regards your recent sale, there isn't anything you can do about if the buyer has now paid. Will it cost you extra to send those items out though? If the sale was for seeds or plastic cell trays then I can't see the postage going up by an increment.
