I'm unable to edit the postage cost once an item has been purchased. Listed with Yodel then eBay changed this to Evri but the postage cost if the cheaper Yodel price. Firstly, can I use Yodel still?
Also, one buyer wants to pay extra for a faster delivery, how do I do this?

Thanks, they've agreed to a faster delivery and to pay extra but can't invoice on eBay. I'll look at Paypal instead. TBH its easier just to take the hit on the difference in cost.
Also, do you know why eBay has stopped using Yodel as this is my nearest drop off point with longer hours and the costs are less for buyers. I had listed around 15 items with Yodel then it was removed and I've had to individually change all of my listings postage costs for buyers.

If a buyer has paid then you cannot adjust any postage detail, this would have to be made afterwards, for a reduction as a partial refund, or to be paid extra, the buyer can pay you via a PayPal Friends and Family payment, cheque, or bank transfer, or you can send them a PayPal invoice, whichever suits you both best.
Come back if you need help with either of those options.
If you wish to change the delivery service after purchase, then personally I would message the buyer see if they are in agreement, some have bad experiences with certain couriers and do not wish to use them, see what your buyer says, before you change the delivery service.

Sorry, forgot to ask about how to amend the postage when you get a label. The only way I can see if use the Packlink option which gives you more despatch options.
Is that the only way?
I need to post at lunch time today.

To be honest I always take the hit as well, it's usually under a squid more to pay , and it doesn't happen often.
If you have used Packlink and wish to do so again ( I would just take the item to the Post Office and buy the correct over the counter postage there), you'll need to void that label for a refund, buy another for the correct price, and you may have to contact Customer Services for them to adjust the new tracking for you, if it's not possible to manage manually.
You may need to wait 24 hours for that label to appear to void it here.

I've never used Yodel, but saw an announcement that Yodel were having severe delays because of the volume of deliveries to be made, maybe that's the reason eBay have pulled this service, so not to disappoint buyers, and to avoid sellers gaining those late delivery marks. No idea, but could be the reason.
