Buyer wishes item to be sent via post after selecting collection is it possible to change and send an invoice for the postage?

It will cause complications so it's probably best to cancel the transaction via the dropdown actions menu for the item on your orders page  (refund will be issued in the process) and relist with postage for them to buy and pay again.
