Just learned that seller has cancelled an item my son was so looking forward to receiving. No explanation. Would at least expect immediate refund. Why then do I have to wait until 25th December (9 days) for the money that I have paid to be cleared for return to me?

All refunds must be done through the eBay resolution centre. If the seller simply cancels by some do-it-yourself method he will at least get stung with eBay's fees. If he invites you to cancel and you "decline" [as you might well] he gets stuck with the fees too.
You might be well advised to see if you can open a "not received" case in the resolution centre. If you are able to then it will show that the seller has not cancelled effectively.
You escalate after 8 full days and eBay refunds. Who knows you might even get two refunds and what would you do then?
