sugar-free sponge

Does anyone have a tried and tested recipe for a basic sugar-free sponge cake, suitable for a diabetic?

 

If at all possible a basic all in one, throw it all in a basin and beat with the electric mixer as "him indoors" isn't keen on cooking, and he certainly doesn't do complicated.

I didn't know there was a sugar free sponge - I know there is a fat free sponge.  Will watch this thread with interest as would love a recipe for a sugar free sponge xx

When I worked with the oldies, I used to make sugar free cup cakes for the diabetics useing Splenda.  I'll see if I can find my little book.  I had one of those pretty cup cake holder stands - it was easier for some of them to handle a cup cake than a slice iykwim.  The secret was to whisk the egg whites to keep it nice and light.

 

I also did a honey one - but not sure (can't remember) if it would be suitable for diabetics.

 

I spoke, privately, with a nurse from my practice, who says it is unbelievable the way you are being treated Stroppy, you should be thoroughly asessed and monitored.  I think we should start a petition for the Practice Manager.

My mum makes sponges with sugar substitute. I think she got the recipe from diabetes uk website. They have some great recipes on there.

I would agree with Ed the sponges I'm afraid are a matter of taste , it's trial & error but you can get some lovely recipes from these sites.its the right time to start looking as well as all the C recipes are coming out about now. It does pay to experiment as some are very dry tasting but with a little tweak here & there can be very nice.

I use to make my oldies cakes using canderel and they were ok but slightly different texture.just used basic sponge mix and replaced sugar with a few spoonfulls of canderel.adding cocoa fruit banana or dried fruit etc.

Honey is a 'no no' for diabetics unfortunately.
