Let's say HMRC wants to investigate my account. I can't figure out how to prove the postage cost besides the bank statements.
The problem here is that the bank statement shows them as different transactions—it can be a payment to Packlink, a direct payment to eBay, or a PayPal payment to eBay.
The transaction reports should show the postage since the labels are purchased through eBay. Yet they aren't there or only some of them are (I selected all transaction types before downloading).
The financial statements show the total postage cost, but is that good enough?

It's fine just to use the information from your bank statements ( plus any cash purchases for postage). You can back them up with the invoices from Packlink and any receipts from the Post Office or any other means of sending your parcels.

Edit: the financial statements are also missing the postage cost sometimes.
