Help from Car Enthusiasts (Petrolheads?).....re tyres

Hi, I'm considering the new VW Golf SV that comes fitted with  205/55 R16  tyres.
Road tests are excellent, comparable even to normal Golf but report slight roll when cornering due to increase of body height.
Do you think that wider tyres would help/cure that, & if so at what cost to the cars performance?
Also apart from high cost is there any reason why Winter Tyres should not be used year round? I live in Central Scotland & the roads are usually wet.
