This has literally just happened - I was going through my Watch List (7 pages, 10 items displayed per page), and the page count changed from 7 to 2 (I checked, and I didn't inadvertently change the number of items shown per page - it's still set to 10).
This only seems to affect the desktop browser - the mobile website is still showing my Watch List correctly (i.e. showing all the items in it). I can't comment on the app, as I no longer have it.
Hopefully, this is just a small blip that may even have been resolved by the time I've finished typing this. Still, just wondered if this has happened to any other accounts.

Ignore the above, it was me being dense. I somehow clicked on one of the category tabs at the top of the list (the default is 'All categories'), and I was only being shown the Watch List items in that category. Duh!
I don't normally touch those tabs - just about everything in my Watch List is a DVD, blu ray or CD anyway. This led me to wonder why only two pages were displayed earlier - after all, two pages at 10 items per page equals 20 items at the most, and I have way more of the aforementioned items in my list than that.
It's not something I've ever really bothered paying attention to before, but I have different category tabs for items that are actually in the same category. That sounds as clear as mud, what I mean is this:
The first tab reading from left to right is 'All categories (64)', which is correct - that's the total number of items in my Watch List. Next along is 'DVDs and Blu-rays (37)' - I know without even looking that I have more than that in the list. But then the next tab is 'DVDs and Blu-ray Discs (13)' followed by 'DVDs and Blu-ray Discs (3)' [note that the wording of the latter two categories is exactly the same, character for character].
I won't list all the remaining tabs, but basically there are lots of different tabs for DVDs and blu rays, some with slightly different wording (e..g. adding 'Discs' as above), but also some with the precise same wording. There's even a tab for 'DVD y Blu-ray (1)' which, as I suspected, is for an item listed by a Spanish seller.
Anyway, I've answered my own question, only to end up with another one: why such a variety of 'different' categories for items which all belong to one? I'm guessing it must be to do with main and sub-categories, so one seller might list under 'DVDs and Blu-rays' as the main category, whereas another might get there by starting with 'TV and Film'. Does that sound plausible? It's the only reason I can think of to explain the proliferation of category tabs on my Watch List.

The categories that appear on the top of the Watch List are the categories that your Watch List items are listed in. As you surmise, there is more than one DVD & Blu-ray sub-category under different higher level categories, and it sounds like at least one item was listed on a different country site entirely, where categories can be organized differently, though they may have very similar names.
