If you have outstanding bids or offers, there are limits to what can be changed.

When the offers have expired, try again.

My understanding is you can update the quantity after sending an offer; but in the OP's case it is something (else) mandatory/invalid in the item specifics which can't be changed/fixed as they have sent an offer. My link allows you to change the quantity without revising the item - but I don't know is ebay still does the same validation anyway or not.

As you say the offer will expire anyway.
