I have "sold" two items to the same buyer. They can go together in one package & save postage. I asked the buyer to do the BIN but not pay so that I could send a combined invoice. Unfortunately he opted to change it to cash on collection (he can't collect & I don't expect him to) as he maintained he couldn't complete the action otherwise. Now I can't send an EBay invoice as the system says it's CoC. Can I send a Paypal invoice instead or do we have to go through the cancel & redo option?

It sounds to me as though your buyer's PayPal account has been linked to his bank/building society account for quick payments. If this is indeed the case then as soon as he clicked on the Buy It Now button for each item it would have taken him to the checkout page and he would have had to pay for the item. Had your buyer not had his PayPal account linked to his bank/building society account then he could have used the Buy It Now button but given that he would have had to log into his PayPal account manually he could have just held off of doing so until such time as you had sent him the combined postage discount invoice so that you could save him some money on postage.
Given the fact that the buyer has ticked the wrong box there is another way that you could get around the problem, although it would be worth discussing this with the buyer first so as to ensure that he doesn't get the impression that you are trying to get around the problem without consulting him and seeing whether he is OK with the alternative. Explain to the buyer that he needs to unlink his PayPal account from his bank/building society account so that he has to log in manually to pay for each item, as opposed to being taken to the checkout page automaticallly as soon as he clicks the Buy It Now button, and suggest that you cancel the transaction and relist the items for him to buy again. If your buyer agrees to do this then ask him to send you a cancellation request for each transaction and if he does then cancel the sales using the option "Problem With Buyer's Address" as the reason why. Once you have done that relist the items that the buyer wanted to buy.
When you relist the items you have a few options open to you. The first one is to list each item individually, exactly as you did the first time, whereas the second one would be to put them all in one listing with the postage costs adjusted to the amount that you were going to amend the postage costs to when you sent the invoice with the combined postage discount. As soon as you have listed the items again, whether individually or all in the same listing, send your buyer an e-mail via eBay Messages quoting the item lisitng number(s) of the new listing(s) for the items that he wanted to buy. Personally if I were in this situation I would be more inclined to put everything that he wanted into one listing, as this would eliminate the possibility of the buyer making the same mistake again when he comes to pay for the items the second time. In addition to that if the buyer messes you around for some reason and asks to cancel the sale then you've only lost the PayPal fees from one more listing, as opposed to each individual listing if you were to relist each item separately.
In the event that the buyer doesn't respond to your e-mails then I would advise that you cancel the sales, citing "Problem With Buyer's Address" as the reason why. Hopefully it won't come to that and you and your buyer will be able to work something out that works for both of you. If, however, the buyer messes you around again then add his User ID to your Blocked Bidders List.
You can try a Paypal invoice using the Send & Request link at top of page in your Paypal account.
If not see if you can add postage to an ebay invoice. On My eBay click on More Actions > Send Payment Details, far right of item on your sold page. Add the postage and submit (don't tick "reset" if it's there).
If that doesn't work you'll have to cancel and relist for them to buy again.
