I primarily sell books and magazines. I have a lot of potential buyers unable to purchase them as I have GSP turned on and it tells them to contact me as it doesn’t ship to their countries (Mexico, Spain, Japan) which GSP is supposed to do. Is this an issue for anyone else? Customer service haven’t given me adequate answers.

First make sure you have the country of origin boxes completed on your listing and the main item specifics are completed.
This probably will not solve your issue as there are serious failures in the GSP at the moment. I had a book sale to the US a couple of days ago and the invoice was stating that I hadn't a postal service offered. I had ...... it was supposed to go via the GSP. All details were completed correctly and the listing clearly showed GSP for international sales. I should add that the book content was not on any restricted list - simply a book of colour schemes for painting model aircraft.
My options were to send the customer an invoice or cancel the sale.
This problem is not just linked to GSP however. On several occasions in the last few months I have had the same issues with UK sales whereby I have been asked to enter a postal service and send the buyer an invoice, even though the service and cost is clearly indicated in the listing. This is something that has started since 'simple delivery' was introduced which as a business seller I don't use; however I suspect the issue is linked to this.
You are a new seller on eBay; don't worry, you will soon find you have to spend an inordinate amount of time trying to find workarounds to deal with the never-ending stream of glitches on the platform. Good luck.

This issue is caused by international buyers trying to purchase via eBay.co.uk. They need to purchase via their regional eBay website (like eBay.es for Spanish buyers) or eBay.com if their country doesn't have a regional eBay website.
I believe this problem was caused by the introduction of the Buyer Protection fee.

"This issue is caused by international buyers trying to purchase via eBay.co.uk." - whilst this may have been the case with a private seller it wouldn't explain the issue with the business sale I experienced above with a US buyer. I used to have regular GSP sales to countries across the globe; I cannot now remember the last GSP sale I had.

If you look at any of the OP's listings on eBay.co.uk, click into "Postage" then change the delivery country to anything except "United Kingdom" it will state: "Check item description or contact seller for postage options." If you then change the ".co.uk" in the address bar to ".com" - so that you're looking at the same listing on eBay.com - the GSP postage options now show correctly. I believe this is the particular problem the OP is experiencing as they're a private seller and is due to the introduction of the Buyer Protection fee which only applies to a private seller's UK sales.
I believe you're experiencing a different problem that is linked to the introduction of Simple Delivery as you mention. However, the problem the OP is having wouldn't affect a business seller and the problem you're having wouldn't affect a private seller as Simple Delivery would be enabled for the domestic leg of the GSP shipping journey.
