Hi
I was just wondering what happens after you give EBay your national insurance number?
Do you get a letter from HMRC or do you just get an email from EBay?

There is nothing to happen.
They inform HMRC of what you have earned on Ebay.
You may get an email from them telling you, but your not going to get totals as you have access to that yourself.
Just be sure to declare any extra earnings on your tax return.

If you are only selling unwanted personal possessions then it unlikely that you will hear anything from HMRC as you are not liable to pay any tax. Ebay won't be forwarding your sales data to HMRC until next January anyway.

It would only be necessary to submit a tax return if the OP is buying/making things to sell and their turnover is equal to or greater than the £1,000 trading allowance.

Talk about picking....
If they are earnings then they do need to be reported.
The £1000 is the amount that you can earn before you have to register as self employed.
It's not an allowance to earn before you have to report said earnings!
And just for the record, the "Trading allowance" is exactly for those who are selling to make a profit.
It must be reported on your tax return as you have to do that, in order to claim tax relief on it.
And as always, anyone doing this kind of thing should get proper tax advice and not rely on what they are being told on a forum!

I’m a bit of a hoarder.All the items I sell are my personal possessions,either bought by myself or gifted to me. I just want to declutter but all these new rules is making it hard.

Decluttering your own stuff is not trading. You can carry on as you were. You only have to declare it if you are buying/making to resell (trading) or you sell one item or set for £6000+ (then capital gains tax may be due).

There are not any new rules regarding selling online.
All that has changed is that online marketplaces now have to report sales to HMRC.
If you are selling your own unwanted items, you don't have to pay tax on the sales.
