Haven't had much time on this yet but first attempts with this new listing format today is like this to get back to your own carrier who will take your large/small items, (preview works, not tested with listing):
Still start with over £750 - £800 is easy enough.
Weight - go to 40Kg as this will be above the 30Kg DHL will supposedly take when they come on board soon.
Dimensions - put these high enough to surpass the DHL 120cm x 80cm x 80cm size limit.
This ensures that the package is oversized.
At the end is an option for cash on collection - who knows if this will work in practice?
The annoying part is having to create postage policy and payment policy now.
Anyone up for trying it out - I haven't got time to find something to list right now to check it out for proof of working - family business taking my time at present. A bit of a faff around again😎
Create a postage policy:
Select postage method, small to medium items appears to suffice here, the oversize reappears at the end:
Add primary service - up to 4 possible. Buyer pays or free again, you can include your packaging in the cost here:
Immediate payment or CASH ON COLLECTION selection!

I change the price...the size options appeared then vanished.
I tried anyway with increasing the weight....got a choice of carrier options - I want Evri 120cms; choose that....changed the price and bam....it all went back to the original with medium parcel 60 cm.
What the heck are ebay playing at?!
I have three items listed....two around 120cms and one at 81cm.....as its stands I cannot offer postage on ebay.
What a farce.

Are you following it step by step? Sounds to me as though you are not.
Have you created your postage policy correctly and you are applying the correct one?
You must be missing something out as I can list with it no problem.

My point is that I shouldn't have to mess around just to do something that was possible a month ago.
While I get that some people just want to list a pair of jeans by taking a couple of photos and pushing two buttons (as you do with Vinted) I don't.
I want the option to take fees and postage in to account when setting my price, not to have "Offers" on as standard and , in short, to have control over my sales.
I don't get this aggro on Etsy, but that is getting flooded by drop-shippers and resellers..... You're supposed to be selling tools and supplies, vintage or your own work.

I appreciate your support and replies.....but this simply doesnt work for me.
I have tried all the above...sell similar.....£800 etc etc....it all just reverts back to the ridiculous 61cm.
So the guitars I have at 130cm+ cannot be offered with postage.
Sick to the back teeth of ebay.

Both bass guitars and Electric guitars sub categories default to oversize package and custom postage (for me)

You are not following my workaround correctly - you can choose any carrier you want. Which workaround are you using - the original or this one?

I see you were able to do this just a couple of days ago, however NONE of the options you have displayed in your screenshots are available.
Postage Policy has now changes to Rate table & there is no "immediate payment or Cash on Collection" option

Still working as I posted! You must be missing a step out or you haven't been moved over to this method yet - have you tried the original workaround?

Well - ebay changed the test listing to simpleton delivery! I've ended it and re-listed as it was , I'll see what they do this time.

If it helps anyone I just spoke to customer support about this because the workaround didn't work for me. They said I should use simple delivery, ensure that only Evri was selected and choose the biggest size available but the correct weight. They said Ebay have an agreement with Evri that Evri will accept items over the size limit (we'll see when the auction ends)

If someone is a business seller none of the postage restrictions apply. They can send whatever way they like.
